    Confirming the order spends the ingredients; voiding it puts them back. Nothing waits for a schedule or for closing time.

  • Buy in kilos, pour in grams

    Stock is kept in the unit you buy in and comes off in the unit the recipe is written in. Nobody converts anything by hand.

Eighteen grams a cup is invisible. By Friday it is the difference between ordering beans and running out of them.

04Behind the bar

The shop knows what a drink is made of.

Every product carries its recipe, in grams and millilitres. Completing the order takes the beans, the milk and the syrup off stock — so nobody counts the same ingredients again at closing.
