07:05The old wayBefore BrewCloud
The numbers already exist. They are in a notebook, a calculator, a wall chart and somebody’s memory. The one question that matters at closing takes an hour to answer, and the answer is a guess.

Orders, in the order they happened
Nobody adds it up until closing, and the total never matches the drawer.
Today’s takings, once
The result is on a screen that clears.
What was on the shelf, last time somebody looked
Selling forty lattes does not change a single line of it.
Whatever was said out loud
It is the only trace of a void, a comp or a wasted litre of milk.
A shop can be busy all day and still not know what it sold.
Before BrewCloud
BrewCloud brings it together. One order. One record.

One entry at the till moved the bar queue and the payment record. It moved the coffee on the shelf too, because an Iced Latte has a recipe.
01At the counter
Sizes and add-ons belong to the drink, so the price follows what the customer actually asked for. A 16oz is not a separate product to keep in step.
A working demo — tap a drink. Nothing is ordered.

02On the bar
Recording the payment puts the order on the bar. The barista reads the name Mara gave at the counter — not a number shouted across the room, and not a ticket somebody copied out again.

15:10Behind the barRecipes and stock
A café does not sell one Iced Latte. It sells 18 g of beans, 180 ml of milk and 30 ml of syrup. Write the recipe once, and every sale spends what the drink really costs.

Inventory
Ingredients · kept by the ledger
Source #0041 · reversed automatically if the order is voided
Confirming the order spends the ingredients; voiding it puts them back. Nothing waits for a schedule or for closing time.
Stock is kept in the unit you buy in and comes off in the unit the recipe is written in. Nobody converts anything by hand.
Eighteen grams a cup is invisible. By Friday it is the difference between ordering beans and running out of them.

04Behind the bar
Every product carries its recipe, in grams and millilitres. Completing the order takes the beans, the milk and the syrup off stock — so nobody counts the same ingredients again at closing.
